To get your answer, you need to know the density of the specific cooking oil you'll be using.

The density of cooking oil depends on the type of oil (coconut, cotton seed, olive) and the temperature of the oil.

If we take a typical cooking oil at an average temperature, the density would probably be between 0.91 to 0.93 grams per cubic centimeter for a temperature between 15 °C and 25 °C.

So if you assume an average density of 0.92 kilograms per liter, then you can convert that to gallons and metric tonnes. Note that 1 kg/L = 1 g/cc.

So first convert 0.92 kg/L to tonne/gallon:

0.92 kg/L = 0.003482578856 tonne/gallon

Now just flip the last number:

1/0.003482578856 = 287.1435 gallon/tonne

So that means for a cooking oil with a density of 0.92 g/cm3 or 0.92 kg/L, you would have around 287 gallons in 1 metric ton.

Note these are U.S. liquid gallons, so you have to be careful to choose the right units for your particular needs.
